11/23/08 09:05 pm - Yummy Easy Dinner (Trader Joe's Meatless Meatballs)

I had seen these vegetarian meatballs (frozen) at Trader Joe's a while back and finally decided to try them. I brought them home and have had them sitting in the freezer for a couple of weeks now. Tonight I wanted an easy dinner, so I dumped them into the crockpot and made a homeade bbq sauce (recipe below). Then I just cooked up a bag of egg noodles and added a bit of garlic, butter and a little bit of asiago cheese I had left in the frige. A salad was made by the girls. It was so yummy! I am going to buy these again.

BBQ Sauce Recipe:

BBQ SAUCE 

2 tbsp. butter
1 c. water
1 c. ketchup
2 tbsp. vinegar
1 tsp. salt (optional)
1/4 tsp. pepper
1/4 c. onion, finely chopped
2 tbsp. Worcestershire sauce
2 tbsp. lemon juice
2 tbsp. brown sugar
1 tsp. dry mustard powder

Melt butter. Saute onion until soft. Add remaining 9 ingredients. Simmer for 20 minutes. Makes about 2 cups of BBQ sauce.

The Meatleess Meatballs were in the crockpot on high for about 2 1/2 hours, and just soaked up the sauce.

My mom used to make this for us. It is such an easy dinner, and the family loves...

Saute 2 large sweet onions with 1 stick of butter until the onions are soft
Dump in:

2 cans sweet corn
2 cans creamed corn
2 cans campbells potato soup
1-2 cans lowfat canned milk
season with salt/pepper to taste

Heat through and serve.

And because I figure corn goes well with well, corn, I often make a pan of cornbread for the side dish.

I had to go to the Cardiologist today for the results of my echo. Overall my heart looks good. I have a small valve leak, and therefore a slightly larger left Atrium. He said it is not 'normal' but it is also farily common, and based on what he sees, it should not be a big deal.

So, we have no idea why I have PVC's, but he doesn't think it is caused by my synthroid. Whew! Because I am not prepared to give up my thyroid meds. It is amazing how much better I feel now that I am on the meds. I am still not back to 100%, but people! Who KNEW the thyroid affects so much. Weird things are better that I would never have guessed had to do with low thyroid.

So, now I need to figure out if my tiredness is still caused by low thyroid, or if it is the PVC's that wear me out. Oh, and I have to take daily fish oil and magnesium, because apparently that combination supports the 'electrical' part of the heart. I said I would try--I'm so bad about taking stuff. I have managed to be really good about the synthroid because I take it the minute I wake up (I keep it and water by my alarm clock), but I can't take anything else at that time. I have to wait an hour. Maybe bedtime?

Today I managed to give myself a papercut--on my EYEBALL. Don't do that. Not recommended at all. My left eyesight is now blurry. Hope that it gets back to normal.

Tomorrow morning I go to the Dr. to find out the results of my MRI. I have no idea what they will tell me, but I sure hope that something shows up. My left leg now goes to sleep several times a day. Thank God it is my left leg, cause sometimes it happens when I am driving. On the plus side, the pain is not too bad this week.

Ali decided she wanted bangs, so I cut them for her a couple of days ago. She looks adorable! I want to upload a picture, but I can't find the cord to the camera. Hoepfully I'll find it soon. I need to get pictures of her cute 11 year old self.

Tonight on the way home from farmers market, where our family had met up for dinner, Jeff and Ali were rear ended by a kid. Fortunately nobody was hurt, but unfortunately the kid was driving a dodge durango, and the back of Jeff's car is totally smashed in.

Jeff had started across the intersection, when some people walked into the crosswalk right in front of him. He stopped, but the kid behind him must not have been paying attention, and just creamed him--to the point of moving Jeffs car forward--and his car is a heavy car too. Scared Ali and LOT, but she is fine.

I was about two cars behind them with Madi, so I came to the same interesection and noticed the dodge durango wasn't moving forward, then I see that he has hit Jeff, so I pulled over and we all got to be the town entertainment for an hour while the cops wrote up the report. Seriously, this happened on the main intersection of our small town on the night of the week when 1/2 the town is out at farmers market to shop/eat dinner and listen the whatever band is playing. Several people we knew stopped to make sure we were ok.

So, we shall see what the insurance says. No worries on fault--it was clearly the kids fault--and we heard the cops questioning him about the smell of alcohol on his breath--but they didn't make him walk a straight line or anything. He has insurance. Jeff has had the car 3 months. It is a 1999, and we paid cash for it, so now we shall see what happens next. It sure isn't pretty--I wonder what it takes to total a car.

I'm not sure if I am sad or excited to finally have our house on the market. If it sells, we will probably just rent for a while, but in Napa. If not, then at least we have finished up a lot of the fixing up we've been working on for the last 8 years. If we were to stay long term, then I still have a list, but this house has come a LONG way baby. I really should post photos from when we moved in, but no time to scan them at the moment.

Seriously, this pinched nerve has got to go. So. Tired. of. Pain.

Next stop MRI, hopefully Friday.
